Coconut Blueberry Pops

Ingredients: 1 1/2 cups coconut milk 2 tablespoons maple syrup 1 teaspoon vanilla extract 1 cup blueberries, fresh or frozen   Instructions: Mix the coconut milk, maple syrup and vanilla in a blender until smooth. Add the blueberries and pulse until they've been "smashed" but not completely blended. Pour the mixture into popsicle molds and freeze for at least 5 hours or overnight.   Recipe inspired by: Wallflower Girl

Egg Cups

Ingredients: Cooking spray 6 large eggs 1/4 cup milk 1/8 teaspoon salt 1 medium bell pepper, red 3/4 cup spinach 1 ounce cheddar cheese, shredded   Instructions: Spray a muffin tin with cooking spray and set aside.
